Cooking Slump

It's been one of those days (weeks, really) (ok. months) that I pretend that dinner won't be happening tonight.


You know, it's 5:00 and I haven't given any thought to what we'll be eating for dinner.

It's summer and hot out, we'd rather be out playing than inside cooking dinner.

Cooking dinner that Vance probably won't eat because he's too picky and too stubborn to try.

Vaughn is easy, for the most part will eat anything. But when she's done she throws leftovers on the floor and rubs the remainders in her hair.

Justin and I, pleading with Vance to eat and fielding flying food, inhale what's on our plates.

Clean-up takes twice as long as it takes to make everything.

What I'm trying to say is that it seems silly to really spend time cooking at this stage.

And with limited free time, I'd rather not spend it in the kitchen.

I'm sure I've mentioned it all before.

Got any good summer crock pot recipes? Or just fast recipes in general? I'm in a cooking slump.....

  2. I am totally in a cooking slump too. I have no desire to cook anything. Even when Samuel takes a great nap, I can't seem to get motivated to do anything. We have been just search for food at night. I have to admit, I would much rather order food then make it. I need to get out of this slump too.

    Slow Cooker Lasagna
    Serves:6
    Prep time: 20 minutes
    Cook time: 3-4 hours
    Approximate cost: $2.50 per serving

    INGREDIENTS
    1 pound lean ground beef, cooked and drained
    32 ounce jar of your favorite red pasta sauce
    16 ounces cottage cheese or ricotta cheese
    1/2 box (4.5 ounces) no boil lasagna noodles, gently broken in half if needed.
    2 cloves garlic, minced*
    1/4 teaspoon dried oregano*
    1/4 teaspoon dried basil*
    1/2 cup onion, finely minced
    2 cups (8 ounces) Mozzarella cheese, shredded
    Parmesan cheese, to taste
    Olive oil or cooking spray, as needed

    INSTRUCTIONS

    Grease the inside of your slow cooker with olive oil or cooking spray.

    Combine beef, sauce, spices, garlic and onion in a medium-sized bowl and mix well.

    Combine cheese, except for Parmesan, in a separate medium-sized bowl.

    In the slow cooker, start with the beef mixture (about a fifth depending on the size of your cooker). Top with a layer of no boil noodles, then crumble on a thin layer of the cheese mixture (about a fifth). Repeat layers, ending with the beef layer on top. Sprinkle with Parmesan cheese.

    Cover and cook on low for 3-4 hours. Serve with salad and garlic bread.
    *If your pasta sauce has already been flavored with herbs and garlic you may omit these ingredients if desired.
