Dice onion, carrot, red pepper and saute until softened. Roughly mash a can of black beans and add mixtures together. Throw in an egg, a cup of breadcrumbs, 1.5 teaspoons of cumin, salt, pepper, and divide to make patties. A little oil in the skillet, cook until browned on both sides.
Mine fell apart. I thought about crumbling them all and making quesadillas, but the kids have eaten so many quesadillas lately it would just be cruel to serve them again. I gave the kids a smorgasbord of leftovers while I did try a burger. On a whole wheat bun I used mayo and slices of avocado. The taste was just okay. My biggest problem was all the different textures. I got half way through and Vaughn wanted a bite. She chewed three times, dry heaved, then threw it up. (She's got quite the gag reflex and for this reason I don't push her to try things if she's not willing.)
At least I tried.
I swear Getlins has the best black bean burgers I have ever eaten! Maybe Uncle Walls and Aunt Dee could persuade them to give us their recipe!
ReplyDeleteI will try and see if Ryan will share his recipe.
ReplyDeleteAunt Dee
I should have taken more time and looked through more recipes before making them. I think the secret may be through mashing the hell out of the beans so the texture is consistent. (Technical term, I'm sure.)
ReplyDeleteI came across this recipe and the picture looked great, so I tried them. Guess the hunt is on for a better recipe!
