Love to Cook, Hate to Plan: Weekly Dinner Menu Week 4/6 - 4/12 (Week 2)


I'm amazed to report that we got through last weeks menu without any changes! Let's hope this week goes as planned too!

On Monday I'm planning something fast. Brown rice noodles with parmesan cheese, sautéed green beans, and french bread. 

Tuesday I'm going to try a new recipe - Slow Cooker Honey Sesame Chicken - and pair it with steamed brown rice and broccoli. 

Wednesday is one of those nights where everything is happening, so diner's choice of leftovers or whatever's in the pantry!

Vance picked Thursday's Lasagna Rolls, which are one of his favorites. (Unfortunately, Vaughn does not feel the same about these and ends up scraping all the insides out. Can't please them all!) I don't follow a specific recipe, but this one is close to how I do it. 

Pizza on Friday nights - Love it!

Saturday is for sliders and a veggie burger for me. My favorite brand is Hilary's. I'll make a simple tomato and cucumber salad and roast some teeny tiny potatoes to round everything out. 

On Sunday I'm planning my current favorite enchiladas. Toss chicken breasts into a slow cooker and cover them with salsa verde, a can of chopped green chilies, and a hunk of cream cheese. (I don't use as much as what's called for in the recipe.) Here's the rest of the recipe. Since it's Sunday, I'll keep it simple and just make some guac to go with.

  1. Yum! I'm going to try the Honey Sesame Chicken. Wonder how it will be with chicken breasts instead of thighs?

  3. Glad to hear it, Delphi! Yes, I have a house full of avocado lovers! Sometimes we just eat them plain but we make a lot of guac too. I keep it simple: avocado, salt, pepper, lime juice, diced tomatoes, a dash of cumin and garlic powder, a little bit of shallots (they're not as strong as onions), but if I'm out of shallots I just toss in a little bit of onion powder. Cilantro if I have it on hand! That's how I like it!

  4. I thought I commented on your meal plan last week but I'm not seeing it. Did it from my phone so maybe it didn't come through. I actually LOVE to meal plan. It makes my week much more smooth. It has also helped my time in grocery store and my grocery bill. I don't buy random things thinking I will use them for something. I feel like if I have a plan then I am much for organized. The honey sesame chicken sounds yummy!!

    1. I'm finding out the same things and Lord knows I need help with saving money on food! It's such a pain to sit down and plan, but I'm glad I've been doing it!

      The Honey Sesame Chicken was actually really good! (I was nervous about it!) I dropped in a few handfuls of frozen broccoli towards the end and didn't have to steam it separately. I'll make it again for sure!
