Love to Cook, Hate to Plan: Weekly Menu (Week 10)

Week of 9/7 - 9/13
On Monday we're celebrating the close of another great summer with traditional BBQ food. Burgers, corn on the cob, baked sweet and russet potatoes, and watermelon. For dessert I'll thaw the last of the 4th of July sheet cake (One of Justin's fave's - he'll be sad it's finally gone!). It's amazing how well this cake holds up in the freezer! I might even make some Cowgirl Coolers! Yee-Haw!

Taking a break from Taco Tuesdays, I promised Vance I'd make Lasagna Roll-ups and serve a salad to go along. 

I'm ignoring the fact that it's still hot out and ringing the gong for the start of Soup Season! I'm excited for this Chicken Fajita Soup and will make some bean and cheese quesadillas to dip, baby, dip.

Thursday I'm planning on making yet another Blue Apron dish, Parmesan-Crusted Chicken. Green beens and roasted potatoes will even everything out. (Blue Apron, if you're listening, let's work together, K? Ha! Dying to try it out!)

Friday, of course, is pizza night! Yay for the weekend!

On Sunday I'll do Vaughn's favorite, Salmon with Balsamic Glaze and asparagus.

  1. I'm coming over for dinner because your menu looks great. I have tried so many times to make a weekly menu but I just can't do it, I wish I had your spirit to keep in this!

    1. Thanks, Pamela! I struggle every week coming up with a menu, but doing so does make my week easier. (I'm definitely not kidding with the "Love to Cook, Hate to Plan" part!) Many times I end up switching things up on the fly to adjust to nightly activities, but at least there's a loose game plan. I appreciate the comment, thanks so much for stopping by!

    1. Thank you! I just wing the roll up's. I mix ricotta, with spinach, parm.cheese, an egg, splash of milk to thin it, and salt, pepper, and Italian seasonings. Spread onto cooked lasagna noodles, roll, pour spaghetti sauce on top, and bake until warm. There's a ton of recipes out there for lasagna roll-ups if you'd like to see more variations. Just Google or use Pinterest. Appreciate the comment, thanks!
